Did you see all of the delicious baked goods at the Claysburg Area Farm Show? The hometown bakers created extraordinary cakes, pies and cookies for competition in the Special Baking Contests. The winners of the contests are able to submit their baked goods to the State Fair in Harrisburg. Those competitions are held each January at the Pennsylvania State Farm Show.
The winner of the Apple Pie contest this year was Jennifer Ebersole of Claysburg. She entered her unusual and delicious apple pie. Here is the recipe that won:
Upside-Down Apple Pie
Pie Crust:
4 cups of flour
1 tablespoon sugar
1/2 cup water
1 teaspoon salt
1 egg - beaten
1 1/2 cups shortening
1 tablespoon vinegar
In a large bowl, mix flour, sugar, salt and shortening with pastry blender until crumbs. Then add water, beaten egg and vinegar and mix with fork.
Filling:
4 tablespoons butter melted
1/2 cup packed brown sugar
1 cup granulated sugar
1/2 cup chopped walnuts
1/3 up all-purpose flour
8 cups peeled and sliced apples
1 teaspoon ground cinnamon
Instructions:
1. Line a 9-inch deep-dish pie plate with aluminum foil, leaving the extra foil hanging beyond the edge of the pan. Coat the foil with cooking spray. Combine melted butter brown sugar, and walnuts; spoon into prepared pie plate.
2. In a large bowl, combine the apples, sugar, flour, and cinnamon.
3, Place one pie crust over nut mixture, pressing firmly against mixture and sides of plate. Cut off excess pie dough, but leave about 1 inch of dough beyond plate edge. Fill the pie dough with apple mixture.
4. Place the remaining pie dough over the filling. Cut off the excess dough to 1/4 of an inch beyond pan edge. Fold the bottom crust over top crust; seal and flute edges. Cut a 1-inch slit in top crust.
5. Bake at 375 for 50-55 minutes or until apples are tender and crust is golden brown.
6. Cool the pie for 15 minutes on a wire rack. Invert it onto a serving platter and carefully remove the foil.
The Claysburg Farm Show also awarded Pam Foor of Everett the first prize in the Homemade Chocolate Cake contest for her Chocolate Whiskey Cake.
Rylie Shay Hartman of Roaring Spring won the first prize in the PA Preferred Junior Baking Cookies-Brownies-Bars Contest for her brownies.
There were no entries submitted for the Angel Food Cake contest.
