I was on vacation last week to Horseheads, NY and as my mom exclaimed when I got back - “thank goodness the cook is back.” Of course, I had to deliver this past weekend with two delicious recipes to go with our cookout on Sunday. And now, I get the weekly privilege of sharing these recipes with you.
BLT Macaroni Salad
Ingredients:
1/2 cup mayonnaise
3 Tbsp. chili sauce
2 Tbsp. lemon juice
1 tsp. sugar
3 cups cooked elbow macaroni
1/2 cup chopped tomato
2 Tbsp. chopped green onions
3 cups shredded lettuce
4 bacon strips, cooked and crumbled
Directions:
In a bowl, combine the first 4 ingredients. Add the macaroni, tomato and onions, toss to coat. Cover and refrigerate. Just before serving, add lettuce and bacon, toss to coat.
Salami Roll-Ups
Ingredients:
1 package – 8 oz. whipped cream cheese
1/4 lb. hard salami, finely chopped
2 Tbsp. Dill pickle relish
4 flour tortillas
Directions:
In a small bowl, combine the cream cheese, salami and pickle relish.
Spread over tortillas. Roll up tightly, wrap in plastic. Refrigerate for 15 minutes. Unwrap and cut each tortilla into 1 inch slices.
