Hello again, everyone. So far we have made it through five out of the seven dairy cattle breeds, but this month, I would like to highlight the Ayrshire breed.
The Ayrshire breed originated from the County of Ayr in Scotland. They are a gorgeous reddish-brown mahogany and white color. These colors are usually in a spotted pattern on this breed of cattle. Ayrshires are renowned for their ability to adapt and conform to many environmental situations and farm management systems.
They also have very strong legs and feet that help them move around and stay healthy. This is very helpful in their excelling ability to graze for grasses and forage. The strength, hardiness, and adaptability of Ayrshire cattle has become such a desirable trait for other dairy cows to have and possess nowadays. The Ayrshire breed of cattle ranks 6th in milk production against the 7 main breeds in the United States.
With Valentine's Day being this month we usually think of love during February and it is an important time to remember to show our love and support for all the dairy farmers. This month I chose a favorite meal that is loved so much by my family and I hope you all love it as well. It will also help you get your three servings of dairy each day, too.
Stuffed Shells
Ingredients:
● 1 (12 oz.) box San Giorgio jumbo shells, uncooked
● 4 cups ricotta cheese (2 lbs.)
● 2 cups shredded mozzarella cheese
● 3/4 cup grated parmesan cheese
● 3 eggs
● 1 Tbsp. chopped fresh parsley
● 3/4 tsp. Oregano
● 1/2 tsp. salt
● 1/4 tsp. pepper
● 3-1/2 cups spaghetti sauce
Directions:
Cook jumbo shells according to package directions; drain. Cool in a single layer on wax paper or aluminum foil to keep shells from sticking together. Combine cheeses, eggs, parsley, oregano, salt, and pepper. Fill each shell with about 2 tablespoons of cheese mixture. Spread a thin layer of sauce on the bottom of a 13x9 inch baking pan. Place shells, open side down, in a single layer in the pan; cover with remaining sauce. Sprinkle with additional parmesan cheese, if desired. Cover with aluminum foil; bake at 350 degrees about 35 minutes or until hot and bubbly. Allow to cool and enjoy!
