What is one of your favorite meals of the day? One of the most important, doctors tell us, is breakfast and that happens to be one of my favorite meals of the day.

Who doesn’t love getting up on the weekends and going to one of the many Cove eateries for a delicious breakfast? Or, you can stay in with your loved ones and cook a tasty meal at home. If you choose the latter, I have two of the best breakfast recipes for you this week.

Amish Breakfast Casserole

Ingredients:

1 lb. bacon, diced

1 medium onion, chopped

6 large eggs, lightly beaten

2 cups shredded cheddar cheese

4 cups frozen shredded hash brown potatoes, thawed

1-1/2 cups cottage cheese

1-1/4 cups shredded Swiss cheese

Directions:

Preheat oven to 350 degrees F. In a large skillet, cook bacon and onion over medium heat until bacon is crisp, drain.

In a large bowl, combine remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9 baking pan.

Bake for 35 to 40 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.

Fluffy Pancakes

Sure, the grocery store provides us a convenient way of using items such as Bisquick or other shortcuts – but who wants to do that? These pancakes are easy and taste just as great. This is a great way to bring kids into the kitchen, too.

Ingredients:

1 cup flour

1 Tbsp. sugar

2 tsp. baking powder

1/2 tsp. salt

1 large egg

3/4 cup milk

1/4 cup butter, melted

Directions:

In a small bowl, combine flour, sugar, baking powder and salt. Combine egg, milk and butter, stir into dry ingredients until slightly moistened.

Pour batter by one-quarter cupfuls onto a greased hot griddle. Turn when bubbles form on top of pancakes, cook until second side is golden brown.
